So now that the holidays are over, I'm back at my apartment and cooking for myself again. On my first night back I was craving tofu, since I don't get to eat it a lot when I'm at home. So I tried this grilled teriyaki tofu recipe from the Whole Foods website, which tastes exactly like the tofu from the salad bar! I made some brown rice and vegetables stir fried in sesame oil to go with it.
The next night I had leftover rice and veggies with this toasted sesame ginger salmon from How Sweet Eats, which was really easy and flavourful.
I'm only taking one class this semester, since that's all I need to graduate, and it's Monday mornings at 8:30 am. I like early classes, so I don't mind it at all. I made myself overnight oatmeal with milk and Greek yogurt the night before so that I had something quick to eat before rushing off to class. I stirred in a banana, blueberries and soy nut butter in the morning.
When I got home from class, I was more than ready for lunch. Ever since my salad from Kindfood last week, I've been craving more fresh salads. So I satisfied my craving with a nutrient-packed bowl of massaged kale, quinoa, avocado, tomato, tofu, hummus, and tahini.
Since I'm only taking one class, I've been applying to part-time jobs so that I have something else to do this semester. I'd really love to work at my favourite nut-free, gluten-free, vegan bakery cafe and I wanted my application to stand out, so I made some gluten-free, nut-free, and vegan cookies to go with it! Hopefully they'll help me woo myself into a job!
I'm just writing this post while enjoying a cup of tea at that cafe right now. I'm sitting in a comfy arm chair and I swear I could just stay here all day! But I've got more job hunting, a lunch with friends, a workout, and cooking homemade Bolognese sauce on the agenda today, so I need to drag myself away from this chair soon. I tried a Real Simple recipe recently that was a honey soy glaze for the salmon. The two flavors worked really well together and I've repeated that recipe many, many times.

Serious meal envy right now, everything looks so good! When I make tofu, I usually press it for a few hours, marinade it, then pan-fry it on the stovetop. Salmon is usually marinated and broiled in the oven. Both work well for me!

ReplyDeleteOne of my all-time favorite tofu recipes is from 101 Cookbooks (http://www.101cookbooks.com/archives/orange-panglazed-tempeh-recipe.html). The original recipe is for tempeh, but I go back and forth on which version I like best. As for salmon...anything that I can slather a good dill yogurt sauce over! Mmmm!
