What I Ate Wednesday #68

I want to give a giant round of applause to anyone who blogs while working full time. I have no idea how you do it! With my one course for school, 20 hours per week at my job, volunteering, and side projects,  it's about the equivalent of full-time hours and man, is it exhausting. I almost didn't have the time to write a post today.

Luckily my What I Ate Wednesday posts are pretty easy to write, since they're just a collection of noteworthy things I've made and/or eaten in the past few days.


I. My first poached egg!!! Some of you may remember that poaching an egg is on my kitchen bucket list - but I don't think I can cross it off quite yet. This guy turned out really messy and spread all throughout the water, even though I added vinegar to the water. I definitely need a bit of practice. But messy or not, it tasted delicious on top of a piece of buckwheat, oat and flax toast with avocado, smoked salmon and sliced green onion.


II. Cupcakes - oh wait, I already showed you these in Monday's post. I guess I just wanted to show them off again. They were pumpkin flavoured with a cinnamon cream cheese frosting, and they tasted amazing! I definitely recommend this recipe.


III. A pretty standard breakfast of vanilla Greek yogurt (2%, because a little dairy fat is good!), Kashi Honey Almond Flax cereal, PC bran cereal, a banana, blueberries, and a scoop of almond butter.


IV. A variation of my protein power bowl, with edamame instead of kidney beans. I don't know if there's such a thing as a perfect meal nutrition-wise, but this is probably pretty darn close! Fibre? Check. Green veggie? Check. Orange veggie? Check. Lean protein? Check. Healthy fat? Check. Whole grains? Check.


V. Banana and mango oatmeal with a scoop of pepita-sunflower seed-hemp-flax butter aka. my new favourite nutless nut butter!


VI. Dinner at Kelsey's from a Life by Design dinner with Cheryl. I might do a post on this if I have time, but basically it's a group who believes in these 4 pillars: Eat by Design, Move by Design, Think by Design and Power by Design. They have some really cool ideas, but not all of which I agree with. For example they believe in a Paleo diet, hence why the free dinner we were served was a salad and salmon with veggies and no grains. It was a good meal though, and I enjoyed the presentation. Thanks for inviting me Cheryl!

  1. Seriously!!! I do not understand how some people blog so much - props to them! I have poached an egg before I have a method :) I crack an egg in a pan and let it cook for a little, then put a tiny bit of water in the pan and cover it and it comes out PERFECT!

  3. Kudos on poaching an egg! I've never tried, whenever I was at my parents I got my brother to do it (he did a year of culinary at Fanshawe). I'm sure it's one of those things that just takes practice.

    Perfect meal nutrition wise? Probably a decent sized spinach salad with chicken, blueberries and goat cheese (covers protein and fruit, plus it's pretty much the best combination ever) with a balsamic vinaigrette (there was a blueberry balsamic vinegar by one of the olive oil companies at the Food and Show Show, I wish I had picked up a bottle. It was incredible)with a starch on the side - sweet potato or a piece of whole-grain bread (because grains are not the devil). Followed by a piece of dark chocolate, because that's good for you too. :-)

    P.S. you've successfully given me a huge craving for smoked salmon...definitely going to have to look for that this weekend.

I have yet to try poaching an egg, so I'm afraid that I can't offer much advice, but it seems like one of those practice-makes-perfect type of things... and knowing you, you'll have it down in no time :D As for a perfectly nutritious meal... gah! I have no idea, really. All I know is that it would have to be balanced with a good amount of carbs, protein, and fat.

  9. I'm pretty sure a perfect meal by the textbook has fat, lean protein, and whole grains-- for me, I'd add a little dessert at the end of this perfect meal. :)

    I think that a nice, big, veggie-ful salad is one of the most nutritious meals, especially if there is some sort of protein incorporated.

  19. full time job is the reason I wasn't blogging this fall! I totally wanted to, but I guess I didn't quite want it enough to make time for it. Anyways. Yeah, those cupcakes were DEFINITELY worth seeing twice and I'm totally gonna make them for all the people who took my shifts these past few weeks! That power protein thing looks awesome....definitely gonna be something I make in the near future especially with your info on the new protein recommendations! And omg, I'm REALLY interested in hearing your take on the Life By Design thing, I know Cheryl's crazy about it (I meant that in a good way!) and when I read her blog sometimes I really agree and sometimes I'm like uhhh....I have a feeling we'll have the same opinion about the deal lol :-)

  21. Yeah I've heard of the whole life by design thing...some of its interesting but I just cannot get on bord with the whole paleo movement. Its so restrictive to me and I just can't imagine eating so much meat and NO grains. I love my grains! That power bowl lunch looks delicious btw!

  22. Congrats on attempting your first poached egg! Even though it didn't yield a perfect result, it's the effort that counts. (That sounds super cheesy and cliche, but it's true!). I actually think yours looks really good! Poaching an egg is a bucket list item I haven't attempted yet, so you're a step ahead of me. Let me know if you pick up any tips along the way! :D

    I completely agree with you about 2% Greek yogurt out-shining 0%. That little bit of fat makes a HUGE difference!

    A perfect meal in my eyes is one that balances fresh sources of protein, carbs and fats, in a proportion that feels best to the individual eating it. I truly believe that people thrive on different macro ratios, so there's no one size fits all meal!

  23. Everything looks delicious and you don't give yourself enough credit, Chelsea- that poached egg looks pretty legit to me :)! I finally had success poaching one over the holidays! I found the key was making sure I didn't skimp on the vinegar- when I did, the egg almost always split!

    My perfect meal covers all the nutritional bases: complex carbs + lean protein + healthy fats + veggies. It doesn't have to be difficult- even a mushroom omelet (for example) with a side of peanut butter & toast fits the bill!

  25. That poached egg meal looks AMAZING! I really want to poach an egg but I am nervous to do so! poached eggs are just so good and then add smoked salmon? um heck to the yes! I love that you try to optimize nutrition at every meal, but it doesn't stop you from enjoying a meal if it isn't "perfect" what a great model to set for your future patients!
