A weekend of few words

You know that satisfied feeling you get after you have a good weekend? This was one of them. It was the perfect balance of me time, friend time, and productivity. I took a lot of pictures over the weekend, so I'll let them do most of the talking!

Saturday morning trip to Covent Garden Market

Picked up some leeks, butternut squash, pea sprouts, royal gala apples, blueberries, bosc pears, figs, broccoli, Brussels sprouts, goat cheese and tempeh.

Simple lunch of a gruyere omelet, a plain romaine salad dressed with a homemade lemon Dijon dressing, and baguette... inspired by my latest reading material.

An hour long bike ride along the Thames River trail thanks to our unseasonably warm weather!

A blogger meet up with Sam, who is so sweet and down to earth! We had a great time chatting about everything from blogs to school to ice cream while enjoying a sushi lunch at Green Tea. I got a wakame salad, salmon roll, and rainbow roll - hit the spot!

Chicken breasts Dijon for dinner, which was amazing and one of the few dishes I'm going to be cooking over the next week to use up my bottle of white wine. I had to buy it to make Bolognese sauce last week, but I only drink red wine, so I'm trying to find a bunch of dishes to cook with it. Any suggestions?

What did you get up to this weekend?

  4. Looks like a delicious weekend indeed! Love the look of your dinner- so much that I think I may be making it for dinner especially as I have a small bottle of white wine to use up :)! My weekend was a great too- a few meals out with friends including dinner out on Friday, lunch on Saturday and breakfast on Sunday.

  5. I'm glad I could contribute to your awesome weekend! We really did talk about every topic under the sun, didn't we? I'm excited for when we have the chance to do it again!

I remember you saying you were going to make Chicken Breast Dijon, it looked like it turned out great. I love to use white wine in cooking, it works really well with pork and fish. I made a pork tenderloin in the slow cooker with white wine last week and it turned out nicely.

  9. I love those balanced out weekends :) Mine was actually pretty low-key since I was resting up to try and fend off a bug that was trying to attack my system, but I still managed to get in a few coffee dates, board game nights, and a family dinner :)

  14. sounds like an awesome fun/food/friend weekend! Love that Dijon chicken recipe...cooking with wine can be amazing. Other than chicken the only things I've made with it are trout and a spaghetti sauce, but both turned out great!

  16. Sounds like a perfect, relaxing weekend! We had some amazing weather here too...can't believe the temperatures have dropped over 30 degrees since then though! Brrrrr!

Love the eats! It's been TOO long since I've enjoyed the simplicity of a romaine salad and cheese omelet...I usually throw so much into my eggs and salads, but it's nice to get back to the basics sometimes! And that chicken dijon sounds amazing! I still have some leeks (barely hanging on) from a few weeks ago, so I may give that recipe a try! As for the wine, I love going 50/50 with broth whenever I make soups or you can also add it to the skillet next time you're sauteing some veggies!
